Thin, thick, smooth or grainy — why honey texture varies.

Honey texture can range from thin and flowing to thick and slow, and from perfectly smooth to slightly grainy.
Moisture The amount of water in honey affects how thick it is. Our laboratory analysis reported a moisture content of 14.70 g per 100 g for the tested sample.
Temperature Honey flows more easily when warm and becomes thicker when cool.
Nectar source Different flowers produce nectar with different sugar profiles, which influences texture.
Crystallisation and particles As honey crystallises, it can become grainy or creamy. Depending on filtration, tiny natural particles may also be present in raw honey.
All of these variations can occur naturally.
