Understanding HMF in Honey

HMF stands for Hydroxymethylfurfural. It is a compound that forms naturally from sugars, and its level in honey tends to increase with heat exposure and with storage time.

Why is HMF tested? Because HMF rises with heating and age, it is widely used as an indicator of honey freshness and handling. Food standards specify maximum limits for HMF in honey.

Our result The laboratory analysis of our honey reported HMF at 15.6 mg/kg for the tested sample.

Keep in mind HMF can continue to change slowly over time, especially if honey is stored in warm conditions. Storing honey away from heat and direct sunlight is a good practice.
