Raw vs Processed Honey

Not all honey on the shelf is handled in the same way. The words raw and processed describe how honey is treated after it is collected.

Processed honey Commercially processed honey is often heated and finely filtered to make it look uniformly clear and to slow crystallisation, giving a consistent appearance from jar to jar.

Raw honey Raw honey is presented closer to its natural form. It may vary more from batch to batch in colour, aroma, thickness and texture, and it may crystallise naturally over time.

Our approach We preserve the natural character of our honey and present it as raw and unprocessed. Because of this, you may notice natural variations between batches — they are part of the character of the honey.
